Dark Chocolate Covered Cherries

Dark Chocolate Covered CherriesThese adorable chocolate cherries are a delicious treat! These use fresh bing or ranker cherries to create a dessert that is sure to wow and impress. You don’t have to go as far as we did here, and can stop at just having dipped the fresh cherries in antioxidant-rich dark chocolate, but we think this makes it cuter and perfect for Valentine’s day dessert or gift box.

Make sure you use organic cherries that are firm. Unfortunately, they do not keep for more than a day so it’s a good idea to make them the day of. 

A bain-marie (hot water bath) or fondue pot is great for melting the chocolate, but if you don’t have that, a pot with just barely simmering water and a bowl is great too.

Ingredients

  • A dozen firm organic cherries, Ranier, or bing are great!
  • 1 cup organic dark unsweetened chocolate chips
  • Optional: Organic sliced almonds, or hazelnuts—shave them to look like hearts!
  • Optional: Organic white sesame seeds
  • Optional: Organic unsweetened shredded coconut
  • Optional: Tweezers
  • Baking sheet lined with wax paper

 

Directions

  1. Wash the cherries and dry them thoroughly—be aware that any leftover moisture will cause problems for the chocolate adhering to the cherries.
  2. Melt the chocolate in the hot water bath. Holding the stem, dip a cherry in the chocolate and place on the baking sheet, with the stem angled at 45 degrees. If making cute chocolate kittens or bunnies, using tweezers, arrange the almond slices as ears, and the sesame seeds as eyes and nose, shredded coconut for whiskers. Repeat with each cherry. If making hazelnut hearts, simply stick half a hazelnut onto the dipped cherries.
  3. Place in the fridge to cool.
