Grilled Pork Loins With Spiced Apple Compote
Pork and apple is a combination as old as time, and this grilled pork loin recipe with a spiced apple compote is a delicious weeknight dinner. Serve with a side salad and some fresh vegetables and sides (like cauliflower mash) and you have a meal for any occasion.
Pork tenderloin is not very fatty, so you’ll want to be careful not to dry it out. For a juicy pork tenderloin, make sure you don’t overcook it since the residual heat will continue to cook the pork.
Organic pasture-raised pork is healthier and much more flavorful than the generic pork you’ll find in your local supermarket.
Ingredients
- 8oz organic pasture-raised pork tenderloin
- 2 tablespoons organic extra virgin olive oil
- ½ teaspoon organic thyme
- ½ teaspoon organic rosemary
- 1 clove garlic, minced
- 1 cup organic apple, fuji, or Honeycrisp, chopped
- ½ cup organic apple cider
- 1 tablespoon organic grass-fed butter
- ¼ teaspoon organic cinnamon
- 1 pinch organic nutmeg
- ¼ teaspoon organic orange zest
- Salt and pepper to taste.
Directions
- Preheat oven to 400 degrees Fahrenheit.
- Combine olive oil, thyme, rosemary, garlic, salt, and pepper. Rub the tenderloin with the mixture. Place on a pan and roast, for about 25 minutes or until slightly pink in the center (it will continue to cook as you let it rest.) Allow to rest for 7-10 minutes.
- Combine apples, apple juice, butter, cinnamon, nutmeg, and orange zest in a saucepan and bring to a simmer. Cook until apples are soft and somewhat translucent.
- Slice pork into medallions and serve with apple compote.
