Holiday Spiced Carrots
This spiced carrots recipe is a colorful and flavorful side dish, perfect during the holidays to go with turkey, ham, or prime rib. The reason we chose multi-colored carrots is for both the visual pop factor and the polyphenols—purple carrots, for example, have nine times the polyphenols as other varieties.
Spring for organic carrots since root vegetables often accumulate pesticides, and while you can peel the skin to reduce the amount, a lot of the nutrients and fibers are in the skin itself and would be a waste to just remove.
Ingredients
- 1 bunch rainbow organic carrots, sliced into rounds
- 1 tablespoon organic raw honey
- ½ teaspoon organic cinnamon
- ½ teaspoon organic nutmeg
- ½ teaspoon organic ginger
- Salt and pepper to taste
- 1 pinch organic thyme or rosemary
- ½ cup organic extra virgin olive oil
Directions
- Preheat the oven to 425 degrees Fahrenheit.
- Toss the rainbow carrots in the honey, olive oil, spice, and herb mixture until evenly coated.
- Lay in a single layer on a sheet pan and roast for 30-35 minutes, or until carrots are to desired tenderness. Serve warm.
