No Bake Milk Tea Pudding

milk tea and lavenderDesserts are hard to come by when you’re trying to keep keto and paleo, but they don’t have to be! This recipe is for a pudding made from just a few simple ingredients, unsweetened until you drizzle just a little lavender honey onto it–a little bit of honey goes a long, long way. It’s afternoon tea but in dessert form.

You can easily chill it in the fridge overnight to have it ready for guests when they arrive. The amount of gelatin you use depends on how soft you want the pudding to be. If you prefer it firmer, add more, if you prefer it softer, add less.

All of the ingredients are easy sources as organic and grass-fed, so there’s no excuse not to use them! You can try different types of teas–Darjeeling and Earl Grey are also excellent dessert teas.

Ingredients

  • 2 cups organic grass-fed Milk
  • 2 organic Afternoon teabags
  • 1 packet organic Gelatin
  • ½ teaspoon organic Lavender
  • 1 cup of organic raw honey
  • Top with organic berries (optional)

 

Directions

  1. Bring honey to a boil and add lavender and turn off the heat, allow to steep for 5 minutes. Strain into a sterile jar.
  2. Bring 2 cups of milk to a simmer on the stove, add tea bags, and allow to simmer until tea bags have been spent. Remove tea bags, squeeze dry.
  3. Add gelatin to the pot and allow to simmer until all the gelatin has melted and no lumps remain. Pour mixture into ramekins and allow to cool in the fridge until fully set about 40 minutes. 
  4. Run a knife along the outer edge and gently wiggle the pudding out onto a plate. Drizzle with a little lavender honey and garnish with berries if using. Alternatively, you can just drizzle the honey into the ramekins and top with berries to be spooned out.
