Pan-Roasted Acorn Squash
Acorn squash is similar to butternut but less sweet. It’s a nice squash to have and it has such cute and ruffled edges when you sliced it makes for a fun dish visually.
Make sure you keep the heat lower since, like most in the gourd family, they take a little longer to soften. You can also do this in the oven as well if you don’t feel like babying it on the stove.
Make sure you use raw organic honey and organic acorn squash to prevent yourself from accidentally ingesting any pesticides.
Ingredients
- 1 organic acorn squash, sliced ¼ inch to ⅓ inch
- ½ cup organic extra virgin olive oil
- 1 tablespoon raw organic honey
- ½ teaspoon organic cinnamon
- 1 pinch organic nutmeg
- Salt and pepper to taste
Directions
- Toss acorn squash slices in olive oil, honey, cinnamon, salt and pepper, and nutmeg.
- In a pan over medium heat, roast until softened and slightly charred on the edges.
- Serve hot.
