Quinoa Power Bowl
Quinoa is an ancient grain, part of the amaranth family, and is high in protein, fiber, B vitamins, and is delicious to boot! This power bowl is packed with organic veggies of all sorts, high in protein and good fats from avocado and olive oil. Incorporating this into your weeknight meal rotation is a healthy and delicious way to get more vegetables in your diet, promoting a better gut biome and an overall stronger lifestyle.
Since this does have a lot of vegetables (and we stress a LOT), make sure you use organic since you don’t want to be disrupting your gut bacteria with herbicides and pesticides.
Ingredients
- 1 cup cooked organic Quinoa
- ¼ cup organic spinach
- ¼ cup shredded organic carrots
- ¼ cup diced organic zucchini
- ¼ cup organic onion, sliced
- 2-3 organic Sundried tomatoes, sliced
- 1 cup sliced organic grilled chicken
- Organic free-range organic Chicken breast
- Organic minced garlic
- Organic lemon juice
- Organic Paprika
- Organic thyme
- Organic extra virgin olive oil
- Salt and pepper to taste
- ½ Organic Avocado
- 2-3 tablespoons Balsamic vinegar
- Organic extra virgin olive oil, if using
Directions
- You can either choose to steam all the vegetables (for low-fat low-calorie version) or you can saute each over medium-high heat in olive oil after seasoning with a little salt and pepper.
- If you choose to grill your own chicken, you can cook the chicken a day in advance, or if you have leftover rotisserie chicken, that works great too!
- Cook the organic quinoa according to the directions, top with all the vegetables, chicken, avocado, and drizzle with balsamic vinegar.
